Ingredients

  • 2 cups all-purpose flour (spooned and leveled)
  • 3/4 cup granulated white sugar
  • 1/2 cup unsalted butter, softened at room temperature
  • 2 large eggs at room temperature
  • 1 tsp pure vanilla extract
  • 1/2 tsp baking powder and 1/4 tsp salt
  • 1 tsp kosher salt and 1/2 tsp freshly cracked black pepper
  • 1 tsp dried Italian herbs (oregano, basil, and thyme)

Instructions

1
Preheat & Prepare

Preheat your oven to 350°F (175°C). Line your baking pan or sheet with parchment paper or lightly grease with nonstick cooking spray.

2
Mix wet & dry ingredients

In a large bowl, whisk together the dry ingredients. In a separate bowl, cream the butter and sugar, then beat in eggs and vanilla until smooth. Gently fold wet into dry.

3
Assemble & Bake

Transfer the batter into the prepared pan. Bake for 20 minutes, or until a toothpick inserted into the center comes out clean.

4
Cool & Enjoy

Let cool in the pan for 10-15 minutes before transferring to a wire cooling rack. Slice and serve warm or at room temperature.

Tips for the Best Results

  • Don't overmix the batter — a few lumps are perfectly fine.
  • Let the batter rest for 5 minutes before cooking for fluffier results.
  • Use a hot, well-greased surface for the best browning.
  • Serve immediately for the best texture, or keep warm in a 200°F oven.
